QUINOA PEAR AND MIXED GREENS SALAD

So I whipped up this light and refreshing salad the other day at work with some rave reviews and promised I would put up the recipe.  Luckily I wrote it down as I was going, most of my recipes are throw in this, pinch of that and add more of what until it tastes right to me and sometimes, if I’m lucky, I have taste testers along the way to help.  This salad is a combination of the punch you in the face type of zinging dressing like in my rocket and fennel salad and and a twist on my pomegranate and pear salad with blue cheese.  Both of these salads also have arugula or rocket, in love with this peppery green and use almost as much as lemon in my recipes.  I mellowed it out a bit with some mixed greens and in this salad, added the power and texture of quinoa and the tang of feta cheese.    Quinoa Pear and Mixed Greens Salad SmittenFoodie.com Quinoa Pear and Mixed Greens Salad SmittenFoodie.com

for the salad
2 cups quinoa-I used BOTH red and white quinoa
3 anjou pears that are a little firm and not overly ripe
1/2 small red onion
2 stalks celery
3 cups arugula
3 cups spring mix of your choice-I chose one with lots of color
3/4 cup crumbled feta cheese
1/2 cup raw pepitas (pumpkin seeds) sautéed in a little olive oil and sprinkled with salt
*toasted walnuts would be a yummy add instead of pepitas
 
for the dressing
2 tbls dijon mustard
2 lemons-zested and juiced
1 large clove of garlic-finely minced
2 tbls honey
1 tsp kosher salt
1 tsp cracked black pepper
1/4 tsp red pepper flakes
3 sprigs of thyme-remove leaves
 
prep and chilling time-1 hour, can keep up to 3 hours
serves 6-8

  In a large pot, bring 4 cups of water to a boil and add a good pinch of salt.  Pour in the quinoa, reduce heat to med and let cook until the little “tails” or germs start coming out- about 15 min.  Stirring every now and again.  Drain well and rinse with cold water until cool.  Set aside. Pop into the fridge for at least 1 hour up to 3. Quinoa Pear and Mixed Greens Salad SmittenFoodie.com In a large bowl add in the mixed greens and arugula.  Thinly slice the onion into half moon shapes, add.  Thinly bias cut the celery, add. Quinoa Pear and Mixed Greens Salad SmittenFoodie.com Dump in the quinoa, don’t mix yet, and put in the fridge to join the party.  For at least hour. This part will hold much longer in the fridge if needed, just cover after a couple of hours. Quinoa Pear and Mixed Greens Salad SmittenFoodie.com After the chill time, mix the greens and quinoa. Pour in the pears and dressing, mix.
